About the coffee
Coffee... A gigantic global industry. Tens of millions of people from the New York Stock Exchange, through the shipping companies to the small mountain farms or plantations, all ending in a cup at our home.
"The thing we call coffee has drawn a network around the entire planet and its impact is directly linked to its character." Matthew Herbert, Plat du Jour
In 2008, farmers produced around 135 million bags of coffee, which means more than 8 billion kilograms. Most are distributed to supermarkets and sold with a margin of about 70 percent. A third is prepared and sold as a beverage with a margin of 900 percent.
But before the coffee reaches our cups, it must cross a complex process of cultivation, harvesting and preparation. For example, until we find the coffee bean, fruit pulp must be removed and the hard shell, which covers it, must be opened as a walnut and the coffee bean must dry long before it is ready for export. The whole process of collecting, processing, transportation and sale of coffee involves more than 15 million Ethiopians.
The original coffee comes directly from Ethiopia and is considered one of the best quality. The proportion of Ethiopian Arabica, which is consumed throughout a year worldwide is about 70%. This was one of the reasons why we decided to work with this coffee.
Samay Ethiopian coffee has a distinctive set of exceptional flavors. Our roasting supports these features and highlights them. All of our coffee is within the category of Specialty Coffee. Samay coffee has exceptional taste and a social impact.
